Dāl Soup, Indian

Complexity: Simple :)

Requirements:
  • Onion (chopped small)..............1 medium
  • Garlic Cloves (smashed)...............7-8 cloves
  • Ginger (smashed)
  • Tomato (Cut)...............................2 medium
  • Moong dāl...................................1-2 cups
  • Vegetable Stock *..........................1/2 cup
  • Dhania *(Corriander leaves)..............3-4 sprigs
  • Haldi (Turmeric)...........................1 tsp.
  • Pepper powder.............................1 tsp.
  • Cinnamon powder..........................1 tsp.
  • Garam masālā...............................A pinch
  • Dried tulsi leaves
  • Fresh cream
  • Butter
  • Smasher / Blender

Procedure
  1. Soak the moong dāl in water.
  2. Heat some oil and/or butter in the pan. Put cumin seeds, mustard seeds and let it splutter.
  3. Sauté onion, garlic & ginger till they turn translucent.
  4. Saute the moong dāl for a couple of minutes.
  5. Add water and bring to boil.
  6. Add pepper powder, haldi & salt.
  7. Add the vegetable stock (* optional).
  8. Add more water, put on medium flame till the dāl softens (15-20 mins may be).
  9. Smash the contents manually using a smasher or a blender.
  10. Put a pinch of garam masālā & dried tulsi leaves.
  11. Pour out the soup in the bowl.
  12. Add chilli flakes, fresh cream, finely chopped dhania & serve. :)

Indian Lentil Dal Soup

Ingredients

1 c. dried lentils or 3 c. reconstituted
4 c. vegetable broth
2 c. filtered water
3 cloves garlic, minced
1 onion, chopped
1 carrot, chopped
3 ribs celery, chopped
1 tbsp cumin, ground or to taste
1/2 tsp. curry
1/2 tsp. coriander
1/4 tsp. cayenne
Soy sauce, to taste up to 1/3 c.

Preparation

The night before you want to make your dal, boil the lentils in water for 5 minutes and then discard the water. Soak the lentils overnight if you are using dried. Change the water once while soaking. When you are ready to use the lentils, discard the soak water.

If you are using a pressure cooker to reconstitute the lentils, you can put them in the pressure cooker now. Otherwise, you can hang onto them and add them to the soup later.

Chop the onion, carrots, and celery and add it to a saucepan over medium heat. Cover the saucepan and begin mincing the garlic. Then add the garlic to the saucepan. Occasionally, stir the veggies to distribute the heat and keep them from sticking to the pot.
